We rolled for the relative success/failure of each team and predetermined outcomes based on that so everyone on the team could play anywhere in the timeline of the plot without worrying about variables or keeping things chronological. So, to that end, the outcome for each group is set in stone.
That means that the trebuchets have to fall into enemy hands and be turned on the Inquisition and Orlesian armies as written. But it doesn't mean the thought of sabotage can't occur to your characters, that they can't attempt it, or that they can't attempt it and perhaps partially succeed! They can think of it but not have time, try it but be overrun before they manage, or partially sabotage them in a way that the enemy is then able to repair—as long as nothing ultimately happens that changes the outline that was provided, you're good.
